My friend had a birthday party yesterday evening, and I decided to attempt to make Momofuku Milk Bar‘s cornflake marshmallow cookies to bring along. A few years ago for her birthday I bought some of the very same cookies from the Carroll Gardens Milk Bar  and brought them to her party; seeing as how my husband and I now own the Milk Bar Cookbook (a lovely wedding gift) I thought it’d be fun to try making these bad boys myself! For reference, this is the cookbook’s photo of the cookie:

Before starting on the cookie dough I had to make cornflake crunch, which is SERIOUSLY delicious on its own. It’s very easy: crunched up cornflakes get mixed with dry milk, sugar, salt, and butter, and then toasted in the oven.

Then it was time to make the cookie dough! Unfortunately I don’t have a fancy stand mixer—there’s no room for any more gadgets in our kitchen—so I made do with an old handheld mixer that’s on its last legs. I’m not kidding when I say that you can smell the motor starting to burn on that thing. It’s probably time for an upgrade.

Once the dough was all mixed up, I portioned it out and refrigerated it for an hour. Then I heated the oven to 375°F and baked two sheet pans with six cookies apiece for 18 minutes. When the oven timer went off, I learned a two things: 1) our oven runs hot, and 2) the bottom rack in the oven gets a whole lot hotter than the top rack. The cookies baking on the bottom rack totally burned:

BurnedWhoopsie! I cut the most badly burned parts away from the edges, but overall these six cookies were not fit to bring to a party. “Happy birthday! I brought you some burned cookies!”

The cookies on the top rack also got over-baked, but at least they were much more edible:

MediumAt that point I still had enough dough to make six more cookies but I didn’t have time to bake them and allow them to cool before leaving for the party. Instead, I baked them off today, for 14 minutes rather than 18. I probably could have even gotten away with 13 minutes! They turned out much better than yesterday’s batch:

It’s been a while since I’ve had these cookies from Milk Bar, so it’s hard to say how closely my cookies approximated the real thing. BUT, the party guests thought they were tasty (though it’s possible they were just being polite) and most of them got eaten by the end of the night. My husband and I will pick away at the burned cookies and we’ll certainly devour the successful ones. Yum yum! At least I know how to improve on these in the future.

Because I had extra cornflakes, marshmallows, and chocolate chips, today I decided to make cornflake chocolate krispy treats. I found a basic krispie treat recipe on Food52 and got to work. First, I melted about three tablespoons of butter over the stove, then added the remainder of the mini marshmallows to the pot and melted them. Oooey gooey madness ahead:

Once the marshmallows were all nice and melty, I poured in the rest of the cornflakes, which I had crushed up inside the bag, and stirred them into the buttery marshmallows:

CrunchI also threw some mini chocolate chips into the mix, because why not? Most of them melted, but that’s okay! I wasn’t going for perfection.

The last step was to plop the warm krispie treat mixture into a dish lined with greased parchment paper and press it down to create a brick o’ krispies:

TreatsI allowed the treats to cool down before slicing them and packaging them up for my husband to take to the office tomorrow. We just cannot deal with having this much sugary goodness in the house, so I figured we might as well share the love!
