The other day I was thinking about being lazy and ordering pizza in for dinner, but then I saw a tweet about avocado toast and was inspired to make my own version for dinner. It turned out really well—restaurant quality, my husband said!—so I wanted to share how I made this ridiculously easy weeknight dinner.


Makes 2 servings


  • 4 slices of bread (I used an Arnold multigrain)
  • 2 ripe avocados
  • lemon juice
  • 4 eggs
  • Parmesan cheese
  • 1 tbsp butter
  • Bunch of broccolini
  • extra virgin olive oil
  • salt and pepper to taste

Preheat oven to 400°F. Wash and dry broccolini, then drizzle extra virgin olive oil over it and toss to coat. Arrange broccolini in a single layer on a sheet pan and season with salt and freshly ground pepper. When oven is ready, roast broccolini for 15-20 minutes or until brown and crispy. Squeeze lemon juice over broccolini after you remove it from the oven.*

Halve avocados and remove the pits. Scoop avocado flesh into a bowl and squeeze lemon juice over it (to your personal taste). Season with salt and pepper, then stir and mash with a fork. Set aside.

Fry the eggs using your preferred method. So I wouldn’t have to cook eggs two at a time, I used a larger saute pan and fried all four at once. Four eggs in a pan are too difficult for me to flip, so by default I made sunny side up eggs. To make sure the yolks cooked a bit, I covered the pan with a lid once the bottoms of the eggs had set.

While the eggs are frying, toast the bread and then spread each slice with a quarter of the avocado mash. When the eggs are cooked to your liking, transfer one to each slice of avocado toast. (I got my husband’s help with this—he managed to transport all four fried eggs without breaking any yolks! I would have made a complete mess of it on my own.) Sprinkle some Parmesan cheese on each egg. Drizzle your favorite hot sauce on top of the eggs (we used sriracha) and serve the roasted broccolini on the side. Dig in and enjoy!

Seriously, this is one of the easiest dinners ever. You probably already have most of the ingredients in your house, and it takes 20 minutes tops to prepare. It’s filling, and it’s not terribly unhealthy! Plus…who doesn’t love breakfast for dinner?
